Christmas Pudding

  1. clean fruit, grate carrot, chop nuts and peel.
  2. Beat egge.
  3. cream butter and sugar, gradually add eggs.
  4. Cream until mixture is very liquid.
  5. Stir in mixed flour and bread crumbs, then remaining ingredients.
  6. Mix thoughly.
  7. Pour into well greased baisins (use 2 metal bowls that hold about 3 cups each).
  8. Cover with cheese cloth or wax paper.
  9. Steam 6 to 9 hours or boil 4-6 hours.
  10. Store for several weeks before serving.
  11. To serve: reheat by steaming and serve with custard or brandy butter (brandy, butter and powdered sugar mixed to a very thick frosting).
