Pineapple Citrus Salad With Coconut
- 1 grapefruit
- 2 oranges
- 1 cup pineapple chunk
- 14 cup mint leaf
- 1 tablespoon Agave
- 1 teaspoon grated peeled ginger
- 1 cup cottage cheese
- toasted coconut
- Segment grapefruit and oranges, reserve the juice and put the fruit in a medium bowl.
- Put the pineapple, mint leaves, agave and ginger in the same bowl and mix.
- In a small bowl combine cottage cheese with reserved citrus juices and stir until creamy.
- Serve the cottage cheese with the fruit around it.
- Top with coconut and extra mint leaves.
