Garlic Kale and Mushrooms

  1. Heat oil in a large skillet over medium high heat.
  2. Add garlic and sautee until fragrant, about 1 minute, sitting constantly.
  3. Add mushrooms, lemon juice, salt and pepper.
  4. Continue cooking until mushrooms are just tender, about 4 minutes.
  5. Add kale and stir quickly until leaves turn bright green, about 1 minute.
  6. Remove from heat and serve with goat cheese.
