Black Bean & Corn Salsa
- 1 (28 ounce) can diced tomatoes
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 (15 ounce) can black beans
- 1 (15 ounce) can garbanzo beans
- 1 (15 ounce) canyellow corn
- 12 cup fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon sugar
- 1 teaspoon red pepper flakes
- Hand mix all ingredients into a large bowl.
- Add salt and pepper to taste.
- Place in refrigerator over night to let flavors marry.
