Muscle Muffins

  1. Preheat oven to 350AA.
  2. Grease muffin pans.
  3. Mix dry ingredients.
  4. In another bowl, mix together sugar, eggs, applesauce, oil, vanilla, & pumpkin until well blended.
  5. Stir in chocolate chips.
  6. Mix dry and wet ingredients together without over mixing.
  7. Scoop into muffin pans and bake 18-20 minutes.
  8. Turn onto rack and cool.
  9. Wrap in plastic bag and keep 1-2 days.
  10. Reheat before serving.
  11. Make 1-2 days ahead for best flavor.
