Muscle Muffins
- 2 14 cups whole wheat flour
- 2 scoops chocolate whey powder
- 1 12 teaspoons baking soda
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- 1 cup Splenda sugar substitute
- 2 large eggs
- 1 12 cups pumpkin (trust me)
- 1 cup applesauce
- 18 cup oil
- 1 12 teaspoons vanilla
- 1 cup mini chocolate chip
- Preheat oven to 350AA.
- Grease muffin pans.
- Mix dry ingredients.
- In another bowl, mix together sugar, eggs, applesauce, oil, vanilla, & pumpkin until well blended.
- Stir in chocolate chips.
- Mix dry and wet ingredients together without over mixing.
- Scoop into muffin pans and bake 18-20 minutes.
- Turn onto rack and cool.
- Wrap in plastic bag and keep 1-2 days.
- Reheat before serving.
- Make 1-2 days ahead for best flavor.
