Georgia's buffalo chips
- 1 lb ground buffalo
- 1 medium onion
- 3 tbsp olive oil
- 3 tbsp chili powder
- 12 oz tortilla chips
- 1/2 lb monterey jack cheese
- 1/2 lb cheddar cheese
- 16 oz salsa
- 1 cup sour cream
- Brown onions in olive oil.
- add buffalo and cook until it barely looses its pink (do not overcook buffalo since it dries out easily) add chili powder and set aside.
- lightly oil a cookie sheet/pizza pan.
- place chips in the middle of the pan and evenly distribute meat mixture and cheese.
- spoon on 1/2 sour cream and salsa.
- bake in a 400F oven for approximately 20 minutes (until cheese is melted and slightly Brown) serve with remaining sour cream and salsa.
