Quick Eggplant Parm

  1. slice, salt (30 mins), drain and rinse eggplant
  2. heat oven to 400
  3. line baking dish with bolognese, eggplant, bolognese, cheese and repeat 2x more.
  4. Bake for about 30 mins covered or until eggplant is aldente
  5. Enjoy!
