Quick Eggplant Parm
- 1 eggplant long slices
- 1 cup shredded provolone
- 1 1/2 bolognese
- slice, salt (30 mins), drain and rinse eggplant
- heat oven to 400
- line baking dish with bolognese, eggplant, bolognese, cheese and repeat 2x more.
- Bake for about 30 mins covered or until eggplant is aldente
- Enjoy!
