Lemon-Garlic Glazed Corn on the Cob
- 1 tablespoon butter
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, minced
- 4 ears corn, husked
- 13 cup water
- 2 tablespoons lemon juice, fresh
- 14 teaspoons salt
- 14 teaspoon black pepper, fresh ground
- Heat butter and oil in large skillet over medium heat.
- Add garlic and cook, stirring, until fragrant but not browned, about 1 minute.
- Add corn, water, lemon juice, salt and pepper.
- Cover and cook, gently shaking pan occasionally to turn cobs for about 5 minutes.
- Uncover and continue cooking, turrning cobs occasionally, until all but a few tbls of liquid has evaporated.
- Serve corn drizzled with pan drippings.
