Victoria Sandwich
- 3 eggs, beaten
- 150 g flour
- 1 tsp baking powder
- 150 g butter
- 130 g sugar
- 3 Tbsp blueberry jam
- 2 tsp powdered sugar
- Line a cake baking tin with butter or oil.
- Preheat oven to 180C/350F.
- Put the butter into a bowl, mix until it becomes creamy, then add sugar and mix very well until the mixture becomes a light creamy texture.
- Next, slowly add the beaten eggs while continuing to mix well.
- Sift the flour and baking powder, and put into the bowl.
- Mix roughly using a spatula until the texture becomes smooth.
- Put the mixture into the baking tin.
- Flatten the surface a little and bake for 35 min.
- Check whether it's cooked or not by poking a toothpick into the centre.
- If nothing comes out on the toothpick, it's done.
- If not done, then bake for another 10 min but cover with aluminum foil to avoid over baking.
- Remove to a cooling rack and liet cool for a while.
- When cool enough to touch, take the cake out from the tin and continue cooling.
- When the cake is completely cooled down, Cut the cake in half.
- Spread the blueberry jam on just one side.
- Finally, carefully put the two halves together, dust with powdered sugar and it's done!
- Enjoy this delicious treat at tea time just like Queen Victoria!
