Ginger Soy Salmon
- 1 whole Fillet Of Salmon (2-3 Lbs)
- 1/4 cups Soy Sauce
- 3/4 teaspoons Ground Ginger Or Thin Slices Of Fresh Ginger
- 13 cups Oil (I Prefer To Use Olive Oil)
- 2 Tablespoons Wine Vinegar
- 2 teaspoons Honey
- 1 teaspoon Sesame Seed Oil
- 1/2 teaspoons Ground Pepper
- 1.
- Line a large, oblong casserole dish with foil and spray with cooking spray.
- Make sure the fillet fits into the dish; you may have to cut it and bake it in two pieces.
- 2.
- Wash the salmon fillet in cold water, pat dry with paper towels, and place in the lined casserole dish.
- (My favorite place to buy fresh salmon is Costco.)
- 3.
- Combine the remaining ingredients and mix well.
- 4.
- Pour the marinade over the salmon and let it stand for 1 hour.
- Make sure the marinade gets under the salmon by lifting the edges all around and spoon the marinade over the top several times as it marinates.
- 5.
- Bake with the marinade at 400 degrees F for 20-25 minutes.
- About halfway through the baking, spoon some of the marinade over the top of the salmon.
- When done, let the salmon stand for a few minutes before you serve.
- 6.
- This is just as good cold as it is hot.
- I like to serve it cold on top of a mixed bed of greens for lunch.
