Dressing for Poached Beef
- 1/4 teaspoon finely chopped garlic
- 3/4 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon nuoc mam (Vietnamese fish sauce)
- 1/2 teaspoon soy sauce
- Freshly ground white pepper to taste
- 13 cup virgin olive oil
- 1/2 teaspoon whole coriander seeds
- Combine the garlic, lemon juice, nuoc mam, soy sauce and pepper in a mixing bowl.
- Add the olive oil slowly, whisking briskly to emulsify the dressing.
- Add the coriander seeds, and mix well.
