Grilled Shrimp Salpicon with Honey-Lime Dressing

  1. Heat grill to medium-high heat.
  2. Mix mayo and hot sauce; refrigerate until ready to use.
  3. Mix dressing, honey and lime juice.
  4. Pour 1/4 cup over shrimp in large bowl; toss to coat.
  5. Let stand 15 min.
  6. to marinate.
  7. Meanwhile, grill corn 15 min.
  8. or until tender, turning occasionally.
  9. Remove corn from grill; set aside.
  10. Drain shrimp; discard marinade.
  11. Thread shrimp onto skewers.
  12. Grill 5 min.
  13. or until shrimp turn pink, turning after 2 min.
  14. and brushing with 2 Tbsp.
  15. of the remaining dressing mixture for the last 1 min.
  16. Grill tortillas 3 min.
  17. or until lightly toasted on both sides, turning frequently.
  18. Brush with 2 Tbsp.
  19. of the remaining dressing mixture; grill 1 min.
  20. or until brushed side becomes glossy.
  21. Cut kernels from corn; place in large bowl.
  22. Remove shrimp from skewers; add to corn.
  23. Add jicama, lettuce, tomatoes, radishes and remaining dressing mixture; mix lightly.
  24. Place tostadas, glazed-sides up, on platter; spread with mayo mixture.
  25. Top with shrimp mixture.
