Chicken and Vegetable Couscous

  1. HEAT the oil in a large saucepan and saute the spring onion for 2-3 minutes or until softened.
  2. Add the chicken and saute for 5-8 minutes or until just cooked through.
  3. Add the peas and cook for a further minute.
  4. Stir in the carrot and zucchini and keep warm.
  5. BRING the water to the boil in a saucepan then stir in MY FIRST VEGEMITE.
  6. Sprinkle over the couscous.
  7. Turn off the heat, cover and stand for 5 minutes or until all the liquid has been absorbed.
  8. Fluff with a fork then stir through the chicken and vegetables.
  9. Serve immediately.
