Herbed Tomato Couscous

  1. Bring broth and garlic to a full boil in a medium saucepan; stir in couscous and thyme.
  2. Remove from heat and cover.
  3. Let stand 5 minutes, until broth is absorbed.
  4. Uncover bowl, fluff couscous with fork, and cool completely.
  5. In a large serving bowl, combine cooled couscous with remaining ingredients.
