Herbed Tomato Couscous
- 1 1/4 c. vegetable broth
- 1 tsp. minced garlic
- 1 c. tomato couscous
- 1 tbsp. fresh thyme leaves
- 3 plum tomatoes
- 1/2 c. chopped parsley
- 3 scallions
- 1/4 c. toasted pine nuts
- 3 tbsp. Extra virgin olive oil
- 3 tbsp. red wine vinegar
- 1 1/2 tsp. kosher salt
- Freshly ground black pepper
- Bring broth and garlic to a full boil in a medium saucepan; stir in couscous and thyme.
- Remove from heat and cover.
- Let stand 5 minutes, until broth is absorbed.
- Uncover bowl, fluff couscous with fork, and cool completely.
- In a large serving bowl, combine cooled couscous with remaining ingredients.
