Lean Buffalo Style Meatballs

  1. Preheat oven to 350 degrees F.
  2. In a small, lightly greased saucepan, saute diced peppers, onions, and 1/4 teaspoon garlic salt on a medium heat.
  3. Keep covered, stirring occasionally until peppers and onions are soft.
  4. Set aside.
  5. In a medium mixing bowl, combine ground turkey, eggs, breadcrumbs, flax, and seasonings; mix well.
  6. Stir in sauteed vegetables and feta.
  7. Roll into small balls using approximately 2 tablespoons of meat.
  8. Set on a foil-lined, greased baking sheet.
  9. Gently brush with Buffalo sauce.
  10. Bake on center rack for 15 minutes.
  11. Remove from oven and brush with another coating of Buffalo sauce.
  12. Bake another 3 minutes.
