South African Avocado Ritz
- 2 cups Pre-cooked Shrimp (or Half The Amount Of Pre-Cooked Prawns)
- 4 Tablespoons Mayonnaise
- 3 Tablespoons Ketchup
- 3 Tablespoons Heavy Cream
- 2 Tablespoons Lemon Juice Plus Extra For Sprinkling On The Avocado
- 1/4 teaspoons Salt And Pepper
- 2 whole Avocados, Washed
- Wash and devein the pre-cooked shrimp/prawns.
- In a separate bowl, mix together the mayo, ketchup, cream, lemon juice, salt and pepper.
- Pour sauce over the shrimp/prawns and mix together.
- Cut the avocados in half and remove the pit (keep the skins on).
- Sprinkle lemon juice on the flesh to prevent browning; season with salt.
- Spoon the seafood mixture onto the avocado halves and serve.
