Lemon Curry Pork & Potatoes
- 150 grams Thin sliced and cut pork
- 2 to 3 Potatoes
- 1/2 Onion
- 2 clove Garlic
- 1 piece Grated ginger
- 2 stalks worth Red chili pepper (cut into round slices)
- 1 Vegetable oil
- 2 tbsp Soy sauce
- 1 tbsp Sake
- 2 tsp Curry powder
- 1 tbsp Lemon juice
- 1 tsp Oyster sauce
- 1 tsp Sugar
- 1 tsp Consomme bouillon
- 2 tbsp Water
- 1/2 tsp Katakuriko
- Marinate the pork in the ingredients for 15 minutes.
- Wash the potatoes and remove any spouts, leaving the skin on.
- Heat in the microwave (600W) for 3 minutes, turn over the potatoes and heat for another 3 minutes.
- Cut the onion into wedges, finally chop the garlic and ginger, and chop the potatoes into bite sized pieces (skin or no skin is OK).
- Heat a frying pan and add vegetable oil.
- Add the garlic, ginger, chilli peppers and once you start to smell them add in the onion and continue frying.
- Once the onion has softened add in the marinated pork and fry.
- Take your leftover marinade and mix with ingredients.
- Add the potatoes and lightly fry.
- While frying, pour in the sauce from Step 5 slowly moving the pan back and forth to mix properly.
- All done.
- Feel free to add some black pepper.
