Boysenberry Syrup Recipe
- 1 lb Boysenberries
- 2 pt White wine vinegar
- 2 lb Sugar
- 4 ounce Honey
- Place the boysenberries in a glass or possibly china bowl and pour the vinegar over.
- Leave to stand for at least 24 hrs, stirring and pressing the fruit regularly, to extract the juices.
- Strain the liquid into a large saucepan or possibly small preserving pan and bring to the boil.
- Add in the sugar, stirring till it is all dissolved, then add in the honey, stirring well.
- Bring back to the boil and boil hard for 5 min.
- Allow to cold completely.
- Originally this syrup was bottled and stored, one Tbsp.
- being added to a glass of warm water to create a bedtime drink.
- However, the syrup can easily be frzn in ice-cube trays and then stored in bags in the freezer to be used when required.
- A pleasant nightcap which is also said to be good for reliving a cool.
