Popeyes Chicken

• 2 pounds Chicken
• 2 cups Mushrooms, Sliced
• 1 bunch Baby Spinach
• 2 Tablespoons Olive Oil
• 2 Tablespoons Chicken Taco Or Fajita Seasoning
• 16 ounces, weight Monterey Jack Cheese, Shredded
• 1 package Flour Tortillas

1. Toss chicken in olive oil and seasoning.
2. Saute chicken until no longer pink.
3. Add mushrooms and cook with the chicken.
4. Add spinach and cook a bit longer, until spinach is wilted.
5. Sprinkle cheese over the chicken, spinach, and mushrooms and put the pan in the oven until the cheese melts.
6. Serve on tortillas with refried beans, guacamole, and salsa.
