Popeyes Chicken
- 2 pounds Chicken
- 2 cups Mushrooms, Sliced
- 1 bunch Baby Spinach
- 2 Tablespoons Olive Oil
- 2 Tablespoons Chicken Taco Or Fajita Seasoning
- 16 ounces, weight Monterey Jack Cheese, Shredded
- 1 package Flour Tortillas
- Toss chicken in olive oil and seasoning.
- Saute chicken until no longer pink.
- Add mushrooms and cook with the chicken.
- Add spinach and cook a bit longer, until spinach is wilted.
- Sprinkle cheese over the chicken, spinach, and mushrooms and put the pan in the oven until the cheese melts.
- Serve on tortillas with refried beans, guacamole, and salsa.
