Rapa Nui
- 1 1/2 ounces brandy
- 1/2 ounce coffee liqueur
- 1/2 ounce creme de cacao
- 1 1/2 cups vanilla ice cream
- 1 small ripe banana
- 2 tablespoons unsweetened whipped cream, freshly ground cinnamon and 1 plantain chip (optional)
- In a blender, combine the brandy, coffee liqueur, creme de cacao, ice cream and banana and blend well.
- Pour into a red wine glass and garnish with the whipped cream, a sprinkle of cinnamon and the plantain chip, if using.
