Adzukis With Pasta And Broccoli Recipe
- 8 ounce spiral pasta (rotini or possibly rotelle)
- 11/2 Tbsp. light extra virgin olive oil
- 1 lrg onion quartered, and
- thinly sliced
- 2 x garlic cloves chopped
- 1 med bunch broccoli cut bite size
- 2 lrg ripe tomatoes diced
- 2 c. cooked adzuki beans - (to 2 1/2)
- (from about 3/4 c. raw)
- 1 tsp freshly-grated ginger
- 2 Tbsp. dark miso - (to 3) or possibly to taste
- 11/2 Tbsp. cornstarch or possibly arrowroot
- 1 c. hot water
- 1 tsp dark sesame oil
- Cook the pasta according to package directions.
- When al dente, drain and set aside in a large serving dish.
- In the meantime, heat the oil in a large skillet; saute/fry the onion over medium heat till golden brown.
- Add in the garlic and broccoli; saute/fry, covered, till the broccoli is bright green, about 2 min.
- Add in the tomatoes, adzuki beans and ginger.
- Simmer over low heat for 10 min.
- In a small bowl, stir together the miso, cornstarch or possibly arrowroot and water till smooth.
- Pour into the skillet along with the sesame oil.
- Simmer gently till the liquid has thickened, about 10 min.
- Add in sauce and broccoli mix to pasta; toss gently to combine.
- Serve at once.
- This recipe yields 4 to 6 servings.
