Grilled Shrimp Po Boys

  1. Prepare the mayonnaise by combining the mayonnaise, 1 tablespoon of the Cajun seasoning and the cayenne pepper.
  2. Mix well and refrigerate until sandwiches are ready to assemble.
  3. While the grill is heating up (medium heat), chop the tomato and onion and prepare the lettuce and baguette.

  10. Grill the bread at the same time, if desired.
  11. Assemble sandwiches, placing the lettuce, onions, tomatoes, mayo and shrimp on the bread.
