Grilled Shrimp Po Boys
- 1/2 cups Mayonnaise
- 1- 1/2 Tablespoon Cajun Seasoning, Divided
- 1/2 teaspoons Cayenne Pepper
- 1 cup Chopped Tomato
- 1 cup Chopped Onion
- 2 cups Romain Lettuce
- 1 whole French Baguette, Cut Into Quarters And Sliced In Half
- 12 ounces, weight Shrimp, Deveined And Peeled
- 1/4 cups Olive Oil
- Prepare the mayonnaise by combining the mayonnaise, 1 tablespoon of the Cajun seasoning and the cayenne pepper.
- Mix well and refrigerate until sandwiches are ready to assemble.
- While the grill is heating up (medium heat), chop the tomato and onion and prepare the lettuce and baguette.
- We grilled the bread so we buttered each piece.
- The butter could be skipped if you choose not to grill the bread.
- Skewer the shrimp and set aside on a plate.
- Mix the remaining Cajun seasoning and olive oil together in a small bowl.
- Generously brush it onto both sides of the shrimp.
- Grill the shrimp for 2 minutes on each side until cooked through.
- Grill the bread at the same time, if desired.
- Assemble sandwiches, placing the lettuce, onions, tomatoes, mayo and shrimp on the bread.
- And enjoy!
