Chunky Lemon Gelatin Chicken Salad
- 1 can (13-3/4 oz.) reduced sodium chicken broth
- 2 pkg. (4-serving size each) JELL-O Lemon Flavor Sugar Free Gelatin
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/2 tsp. dried tarragon leaves
- 1-1/2 cups OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips, chopped
- 1/2 cup chopped celery
- 1/4 cup chopped red pepper
- Bring chicken broth to boil in small saucepan.
- Stir into gelatin in large bowl at least 2 min.
- until completely dissolved.
- Add 1 cup cold water, lemon juice and tarragon; mix well.
- Refrigerate 1 hour or until slightly thickened (consistency of unbeaten egg whites).
- Add chicken, celery and red pepper; stir gently until well blended.
- Spoon into 4 small serving bowls.
- Refrigerate 2 hours or until firm.
