Chunky Lemon Gelatin Chicken Salad

  1. Bring chicken broth to boil in small saucepan.
  2. Stir into gelatin in large bowl at least 2 min.
  3. until completely dissolved.
  4. Add 1 cup cold water, lemon juice and tarragon; mix well.
  5. Refrigerate 1 hour or until slightly thickened (consistency of unbeaten egg whites).
  6. Add chicken, celery and red pepper; stir gently until well blended.
  7. Spoon into 4 small serving bowls.
  8. Refrigerate 2 hours or until firm.
