Turkey Tacos
- 8 taco shells
- 1 12 tablespoons vegetable oil
- 2 cups shredded cooked turkey
- 12 cup chopped white onion
- 1 teaspoon chili powder
- 12 teaspoon ground cumin
- salt and pepper
- 12 cup salsa
- 1 cup shredded iceberg lettuce
- 1 cup shredded monterey jack cheese
- 2 tablespoons chopped fresh cilantro
- Preheat oven to 350*.
- Wrap taco shells in aluminum foil and warm in oven for 5 minutes.
- Meanwhile, heat oil in skillet.
- Add turkey, onion, chili powder, and cumin.
- Cook, stirring often, 2-3 minutes, until onion is slightly softened.
- Season with salt and pepper.
- Fill each taco shell with 1/4 cup turkey mixture.
- Top with salsa, lettuce, cheese and cilantro.
