Bert Greene's Adult Egg Salad

  1. Melt the butter in a small skillet over medium-low heat.
  2. Add the shallot and mushrooms and cook until golden, about 5 minutes.
  3. Remove them from the skillet and finely chop.
  4. Saute the minced salami in the same skillet until crisp, about 5 minutes.
  5. In a bowl, combine the eggs, shallot, mushroom, salami, and any residual drippings from the skillet.
  6. Add the mayonnaise and green onion.
  7. Mix well.
  8. Add salt and pepper to taste.
