Marilyn Crane's Eggless French Toast
- 1/2 c. rice milk
- 1 1/2 oz. soft tofu
- 1 tsp. ground cinnamon
- 1 tsp. pure vanilla extract
- 1 tsp. canola oil
- 2 slice whole wheat bread
- 1 tsp. light syrup
- Combine tofu, rice milk, cinnamon and vanilla extract in a blender.
- Puree until smooth; pour into a shallow bowl.
- Heat oil in a wide nonstick skillet over medium-high hea
- Dip bread slices into tofu mixture to coat on both sides, letting any excess drip off.
- Place in skillet and cook until golden brown on both sides, turning once.
- Transfer to a plate and top with syrup.
