Haloumi Koftes (Kofta)
- 1 pound, 1-23 ounces, weight Ground Beef Or Lamb
- 1 whole Brown Onion, Grated
- 1 sprig Parsley, Chopped
- 1 clove Garlic, Crushed
- 2 Tablespoons Sweet Paprika, Ground
- 1 Tablespoon Cumin, Ground
- Salt And Pepper, to taste
- 1/2 pounds, 2-58 ounces, weight Haloumi Or Kasseri Cheese, Cut Into Cubes
- 1 Tablespoon Oil, For Frying
- Place all ingredients but the cheese and oil in a bowl and mix well.
- Take a small amount of the mince mixture in your hand and roll it into a ball.
- Then using your finger, make a small indentation in the mix and place a cube of cheese in the mince.
- Roll the mince ball around so none of the cheese is showing.
- You want to have the cheese sit in the centre of the kofte.
- Place a tablespoon of oil in a fry pan and heat.
- Place koftes in the pan and cook on medium heat untill cooked through.
- Serve immediatley.
- You can serve this with rice pilav, tsatsiki, bruchetta, or whatever else you like.
