Acorn Squash With Cranberry Filling Recipe
- 2 lrg Acorn squash, about 2 lbs. each
- 1 can Whole cranberry sauce
- 1 Tbsp. Honey
- 1/4 tsp Grnd allspice
- Prick squash several times with fork to allow steam to escape like you would a potato.
- Place in microwave at HIGH till soft when pricked with fork, 10 to 12 min.
- Turn squash over and rotate after half the cooking time.
- Let stand 5 min.
- Cut in half and remove the seeds.
- Place cut side up in a square casserole dish.
- Set aside.
- Combine cranberry sauce, honey and allspice in bowl.
- Microwave at HIGH till warm and bubbly, 3 to 4 min, stirring after half the cooking time.
- Spoon into squash halves.
- Microwave at HIGH till heated through, 2 or possibly 3 min.
- Serves 4.
