Creamy Passionfruit Freeze
- 2 cups passion fruit pulp
- 1 cup caster sugar
- 1 egg white
- 300 ml sour cream, thickened cream can also be used here
- Place pulp, sugar and egg white in food processor.
- Beat at high speed for 10 minutes till thick and frothy.
- Place sour cream in a large bowl.
- Gradually stir in passionfruit mixture till smooth and combined.
- Pour mixture into a 10 cm x 20 cm loaf pan.
- Cover with plastic wrap.
- Freeze overnight till firm.
- Serve sliced or in scoops.
