Smoked Pork Chops With Parsnips
- 2 lbs parsnips
- 3 lbs pork chops, 1/2 inch thick, smoked
- 18 teaspoon salt
- 18 teaspoon ground pepper
- Cut parsnips lengthwise into 1/2 inch slices.
- Place in a casserole dish.
- Sprinkle with salt and pepper.
- Arrange pork chops over parsnips.
- Cover.
- Bake at 350* for 1 hour.
- Remove cover and bake for 10-15 min longer or until juices have partially evaporated.
