Barley With Peppers and Potatoes

  1. Saute chilies and onions in olive oil in a large skillet until crispy tender, about 5 minutes.
  2. Add potatoes, saute until browned about 5 to 8 minutes.
  3. Add barley to skillet; cook over medium heat until hot through, about 4 to 5 minutes.
  4. Stir in cilantro and cumin.
  5. Season to taste with salt and cayenne pepper.
