Vickys Creamy Chicken One-Pot, Gluten, Dairy, Egg & Soy-Free
- 1 seasoned flour as recipe below
- 4 skinless, boneless chicken breasts
- 2 tbsp oil
- 8 slice bacon, chopped
- 600 ml vegetable stock
- 360 grams baby potatoes, halved
- 200 grams baby broad (fava) beans
- 200 grams sweetcorn
- 200 grams cherry tomatoes, halved
- 200 grams pre-made Vickys Cream Cheese, my free-from recipe from my profile
- 140 grams gluten-free / plain flour
- 2 tbsp paprika
- 1/2 tbsp black pepper
- 1/2 tbsp celery salt
- 1/2 tbsp mustard powder
- 1 tsp garlic salt
- 1/2 tsp ginger
- 1/4 tsp oregano
- 1/4 tsp basil
- 1/4 tsp thyme
- 1/4 tsp salt
- My recipe above for seasoned flour makes more than you'll need here but it's great for frying wings etc so I keep a big container of it in my cupboard all the time
- Toss the chicken in the flour then brown off in a pan with the oil over a medium heat
- Remove the chicken and fry off the bacon in the pan until crisp then put the chicken back in
- Add the stock and simmer for 10 minutes
- Add in the potatoes and simmer covered for a further 20 minutes
- Stir in the beans, sweetcorn and tomatoes.
- Simmer uncovered for a final 5 minutes
- Remove the chicken and plate up.
- Stir the cream cheese into the pan of veg to dissolve and serve immediately with the chicken
