So Hearty & Easy Old World Stew
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 (14 ounce) packagesmoked Polish kielbasa (cut into 1/4-inch thick slices(then slices quartered)
- 12 cup sliced green onion
- 14 cup chopped red bell pepper
- 3 cups chicken broth
- 1 (14 ounce) cangreat northern white beans (rinsed & drained)
- 1 large garlic clove (finely chopped)
- 14 teaspoon oregano leaves (crushed)
- 14 teaspoon black pepper
- 14 teaspoon caraway seed
- 12 tablespoon white wine vinegar
- 14 teaspoon paprika
- 2 tablespoons sliced green onion tops
- Cook and stir the sausage in a large skillet over medium heat til lightly browned.
- Remove with slotted spoon and drain on paper towels.
- Place sausage in a soup pot or Dutch oven.
- Add all remaining ingredients EXCEPT Paprika and green onion tops.
- Bring to a boil over medium-high heat--stirring occasionally.
- Reduce heat, cover and simmer 15 minutes--stirring now & then.
- Stir in the Paprika and green onion tops.
- Cook just until stew is piping hot.
- Ladle into large serving bowl or individual bowls and serve.
- Crusty buttered bread of your choice is the perfect accompaniment to this dish.
