Tamale Pie Recipe
- 1 pkg. Stove Top cornbread stuffing mix
- 1/4 c. butter (cut in pcs)
- 1 1/2 c. warm water
- 1/2 c. minced grnd pepper
- 1 c. minced onion
- 2 tbsp. salad oil
- 1 can (16 ounce.) tomatoes
- 1 can (16 ounce.) kernel corn, liquid removed
- 2 tbsp. chili pwdr
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1 1/2 c. grated Cheddar cheese
- 3/4 c. sliced black olives
- 1 pound grnd beef
- Combine contents of vegetable/seasoning package, butter and warm water in a 1 1/2 qt bowl; stir just to blend and partially heat butter.
- Add in stuffing crumbs and stir to moisten; let stand till most of water is absorbed.
- Meanwhile, saute/fry grnd pepper and onion in oil in large skillet till tender.
- Add in grnd beef and brown.
- Add in tomatoes, corn and seasonings; stir to combine.
- Stir in grated cheese and olives.
- Place mix in a 2 1/2 or possibly 3 qt casserole.
- Top with stuffing.
- Bake uncovered at 400 F for 30 min.
- Makes 6 servings.
