Veal Medallions Sauteed With Apples And Brandy Recipe

  1. Lightly season and flour the veal.
  2. Saute/fry them in warm butter for a few seconds on each side.
  3. Arrange them on hot plates.
  4. Add in apples to the skillet and let cook for a few min.
  5. Deglaze with apple brandy.
  6. Add in cream and veal stock and let reduce till half.
  7. Adjust seasoning and pour over the veal and serve immediately.
