Beef Porcupines
- 1 pound ground beef, lean
- 1/2 cup rice cooked
- 1 each onions chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 each eggs
- 8 ounces marinara sauce
- 18 cup vegetable oil
- 8 ounces beef stock
- 1 cup water
- Mix half of marinara sauce in with everything except for consomme oil and water.
- Form meatballs.
- Fry meatballs in oil until lightly browned.
- Add rest of marinara, consomme and water.
- Cook until tender, about 40 minutes, with the pan covered.
- Or bake in the oven at 350F (180C) F for 40 minutes.
