Parmesan-Crusted Chicken Cordon Bleu

  1. Heat oven to 350F.
  2. Pound each chicken breast to flatten slightly.
  3. Spread each breast with 1 tsp.
  4. mustard; top with 1 ham slice and 1 cheese slice.
  5. Roll up to enclose filling; secure with toothpicks.
  6. Mix bread crumbs and Parmesan.
  7. Dip chicken in egg, then into crumb mixture, turning to evenly coat all sides.
  8. Place in shallow baking dish sprayed with cooking spray.
  9. Bake 25 min.
  10. Cover loosely with foil; bake 15 to 20 min.
  11. or until chicken is done (165 degrees F).
  12. Remove toothpicks before serving.
