My First Bolognaise
- 1 tablespoon olive oil
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 stick celery, finely chopped
- 1 carrot, peeled and finely chopped
- 1/2 red capsicum, finely chopped Target 1 pkg For $2.99 thru 02/06
- 1 clove garlic, crushed
- 500 g beef mince
- 400 g can chopped tomatoes King Sooper's 1 lb For $0.99 thru 02/09
- 2 tablespoons MY FIRST VEGEMITE
- 1 tablespoon tomato paste
- 2 teaspoons dried oregano
- 1 cup water
- 400 g mini penne pasta, cooked, drained and kept warm
- Shredded Parmesan cheese, for serving
- HEAT the oil in a large saucepan and saute the onion, celery, carrot, capsicum and garlic for 2 minutes.
- Add the beef and cook for 5-8 minutes or until lightly browned.
- Add the tomatoes, MY FIRST VEGEMITE, tomato paste, oregano and water, then stir to combine.
- Cover, reduce the heat and simmer gently for 1 hour.
- TOSS through the pasta and continue cooking to warm through.
- Spoon into serving bowls and sprinkle over the Parmesan.
- Serve immediately.
