Sweet Potato Casserole
- 4 medium sweet potatoes
- 3/4 cup splenda
- 1/2 cup whole milk
- 2 tsp grated orange rind
- 1/4 cup fresh orange juice
- 2 tsp vanilla
- 1 egg
- 1/2 cup flour
- 3 tbsp butter, melted
- 1 cup panko
- 1/2 cup finely chopped pecans
- 2 tbsp butter, melted
- 3 tbsp maple syrup
- preheat oven to 375.
- Lightly grease a 13-x 9-inch baking dish.
- Place sweet potatoes on baking sheet; bake for 1 hr or til done.
- Cool to touch.
- Peel & mash.
- Reduce oven to 350.
- Combine sweet potatoes, & next 8 ingredients in a large bowel.
- Beat at Med speed with an electric mixer til smooth.
- Spoon into baking dish.
- Combine panko & remaining ingredients; sprinkle crumble mixture over top of casserole.
- Bake for 1 hr or til casserole is heated.
