Special Fried Rice
- 1 1/2 cups water
- 1 cup long grain rice, well rinsed and drained
- 1 tablespoon VEGEMITE
- 2 teaspoons oil
- 1 medium onion, finely chopped
- 1 clove garlic, crushed
- 3 rashers bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 1 cup frozen shrimps, thawed
- 1 cup button mushrooms, halved
- 1 cup frozen peas, thawed
- 1 cup bean sprouts
- 2 eggs, lightly beaten
- spring onion curls to garnish
- Bring water to the boil in a medium saucepan.
- Add rice and Vegemite*, bring to the boil, then simmer, covered, 15-20 minutes until rice is tender.
- Heat oil in a frying pan or wok, stir fry onion, garlic and bacon until onion is tender.
- Add shrimps and fry 2 minutes.
- Add mushrooms, peas and bean sprouts and stir fry a further 2 minutes.
- Stir in cooked rice until well combined.
- Prepare a thin omelette with the eggs.
- Slice and gently fold into rice.
- Serve immediately garnished with spring onion.
