Fiesta Pork with Vegetable Rice
- 2 cups MINUTE Brown Rice, uncooked
- 1/2 cup frozen corn, thawed
- 1 pkg. (1-1/4 oz.) taco seasoning mix, divided
- 1 lb. pork tenderloin, cut into strips
- 2 tsp. oil
- 1 cup red pepper strips
- 1 cup zucchini strips
- 1 cup onion wedges King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup water
- 1 Tbsp. finely chopped cilantro
- Cook rice as directed on package, adding corn and 1 Tbsp.
- of the taco seasoning mix to the cooking water along with the rice.
- Meanwhile, cook and stir pork in hot oil in large nonstick skillet on medium-high heat 2 to 3 min.
- or until pork is evenly browned.
- Add remaining taco seasoning mix, the peppers, zucchini, onions and water.
- Cook 5 min.
- or until vegetables are crisp-tender, stirring occasionally.
- Add cilantro to rice; mix lightly.
- Spoon onto serving plate; top with the pork mixture.
