CERTO Cranberry-Orange Freezer Relish

  1. Rinse clean plastic containers and lids with boiling water.
  2. Dry thoroughly.
  3. Finely chop or grind cranberries.
  4. Measure exactly 2 cups prepared cranberries into large bowl.
  5. Remove colored part of peel from oranges and lemon using vegetable peeler.
  6. Cut peel into thin slivers (or finely chop or grind peel); set aside.
  7. Peel and discard remaining white part of peel from citrus fruit.
  8. Chop fruit pulp, reserving any juice; set aside.
  9. Mix all citrus fruit and peels.
  10. Measure exactly 3 cups citrus fruit mixture into bowl with cranberries.
  11. Add sugar and spices; mix well.
  12. Let stand 10 min., stirring occasionally.
  13. Mix pectin and water.
  14. Add to fruit mixture; stir 3 min.
  15. or until sugar is dissolved and no longer grainy.
  16. (A few sugar crystals may remain.)
  17. Fill all containers immediately to within 1/2 inch of tops.
  18. Wipe off top edges of containers; immediately cover with lids.
  19. Let stand at room temperature 24 hours.
  20. Relish is now ready to use.
  21. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year.
  22. Thaw in refrigerator.
