Stir Fried Kiriboshi Daikon with Snow Peas and Sakura Shrimp
- 20 grams Kiriboshi daikon
- 100 ml Water
- 30 grams Snow peas
- 2/3 tbsp Olive oil
- 2 tbsp Sakura shrimp
- 1 tbsp Sake
- 2 small pinches Salt
- 1/4 tsp or so Black pepper
- Soak the kiriboshi daikon in water for about 5 minutes to rehydrate.
- Drain and squeeze out lightly.
- Reserve the soaking liquid.
- Remove the strings off the snow peas and slice diagonally.
- Add the ingredients to a frying pan over low heat.
- When it starts to smell nice add the snow peas, then the kiriboshi daikon, and stir fry quickly.
- Sprinkle in the sake.
- Add the soaking liquid from the kiriboshi daikon to the frying pan as well as the ingredients.
- Simmer over medium-high heat until there's almost no liquid left in the pan.
- Taste and adjust the seasonings.
- Leave to cool as-is for the flavors to blend together, and it's done.
