Minestrone Soup(No Meat)

  1. Saute onion and garlic in 4 tablespoons olive oil. Add can of chicken broth and 3 1/2 cans of water.
  2. Add all ingredients except macaroni, Parmesan cheese and parsley.

  4. boil and simmer 15 minutes. Add macaroni. Cook until tender. Add parsley and Parmesan cheese during the last few minutes of cooking time. Seasoned salt and a few drops of Tabasco sauce (to your taste) makes this recipe extra special.
