Mammy's Creole Rice
- 1 large onion, sliced
- 3 stalks celery, chopped
- 1 12 tablespoons butter
- 34 tablespoon flour
- 34 teaspoon salt
- 34 cup water
- 1 12 cups tomatoes, diced
- 1 12 cups peas, cooked
- 12 tablespoon vinegar
- 14 teaspoon sugar
- 1 14 cups shrimp, cooked
- 1 12 tablespoons chili powder
- 2 cups rice, cooked and still hot
- Saute onion and celery in butter until browned.
- Stir in flour and salt, and slowly add the water.
- Simmer 15 minutes, stirring frequently.
- Add tomatoes, peas, vinegar, sugar, shrimp, and chilli powder, and continue cooking 10 minutes longer.
- Place rice in a large deep serving plate, and pour creole mixture over it.
