Pickled Plum & Cheese Chicken Tender Sandwiches

  1. Remove the seeds from the pickled plums and use a knife to make them into a paste.
  2. Cut the baby cheese in half.
  3. Wrap a cutting board with plastic wrap, place the chicken tenders with the sinews removed on top, and cover with plastic wrap.
  4. Smack it with a rolling pin to even out the thickness.
  5. Place the shiso and pickled plum on top of the chicken and fold it in half.
  6. Top the chicken tenders with the shiso and pickled plum and fold in half.
  7. Sprinkle with katakuriko.
  8. Coat a frying pan with vegetable oil.
  9. Fry until golden brown on both sides, and they are done.
