Chicken Sour Cream Enchiladas
- 1 pt. nonfat sour cream
- 1 can Healthy Request cream of chicken soup
- 1 can Healthy Request cream of mushroom soup
- 1 small can diced mild green chilies
- 1 pkg. lite flour tortillas
- 1 c. shredded Mozzarella
- 1 tsp. salt
- 1/2 onion, minced
- 1/2 c. skim milk
- dash of pepper
- 2 to 3 c. chopped cooked chicken breasts
- Combine all ingredients except tortillas, chicken and 1/3 cup cheese.
- Pour some sauce in bottom of 9 x 13-inch or larger pan. In each tortilla, place chicken cubes and sauce.
- Roll up and put in pan seam side down.
- When pan is full, pour remaining sauce over top.
- Sprinkle with 1/3 cup cheese.
- Cover and bake at 350u0b0 for 20 to 30 minutes.
