Sweet and Sour Red Cabbage and Apples
- 1 large clove garlic
- 12 ounces whole red cabbage or shredded red cabbage
- 2 teaspoons Oriental sesame oil
- 2 Granny Smith or other tart apples (about 1 pound)
- 1/4 cup apple-cider vinegar
- 1 tablespoon reduced-sodium soy sauce
- 1 tablespoon honey
- 1/2 teaspoon ground ginger
- Freshly ground black pepper to taste
- Mince garlic.
- If using a food processor to grate the cabbage, use it to mince the garlic; otherwise mince by hand.
- Grate whole cabbage.
- Heat oil in nonstick pan, and add garlic and cabbage.
- Saute over medium heat.
- Meanwhile wash, core and cut apples into bite-size chunks.
- Add to cabbage mixture, and stir well.
- Add remaining ingredients.
- Cover, and cook over low heat, until apples are tender, about 7 minutes.
