Apple Cider Pork And Vegetables Recipe
- 1 sm sweet potatoes peeled, and cut into 1/2"-slices
- 1 pkt dry fruit mix - (6 ounce)
- 1 med onion sliced thin
- 1 x bay leaf
- 3/4 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/2 tsp dry rosemary crushed
- 1 1/2 lb lean boneless pork cut 1" cubes
- 1/2 c. all-purpose flour
- 2 Tbsp. vegtable oil
- 1 c. apple cider
- Place first 7 ingredients in slow cooker; set aside.
- Dredge pork in flour and brown in warm oil.
- Remove pork, reserving drippings in skillet.
- Place pork in cooker.
- Add in cider to skillet, stirring to loosen any browned particles; pour over pork.
- Cover and cook on LOW 6 to 8 hrs.
- Remove and throw away bay leaf.
- This recipe yields 4 servings.
