Simply the BEST Chili
- 1 lb hamburger
- 1 lb stewing beef
- 1 lb hot Italian sausage
- 1 lb bacon
- 8 cups tomatoes, diced
- 2 large bell peppers, chopped
- 1 large onion, chopped
- 4 garlic cloves, minced
- 4 stalks celery, chopped
- 4 large jalapenos, seeded and chopped or 4 large spicy pepper, of your choice
- 2 dried ancho chilies, chopped
- 1 (24 ounce) can kidney beans (optional)
- 1 (15 ounce) can whole kernel corn (optional)
- 3 tablespoons lime juice
- 3 12 tablespoons cumin
- 3 tablespoons chili powder
- 1 tablespoon oregano
- 1 tablespoon cayenne
- 1 tablespoon Tabasco sauce or 1 tablespoon your favorite hot sauce
- 1 teaspoon salt
- 12 teaspoon onion powder
- 12 teaspoon garlic powder
- Cut the stew meat into bite size pieces.
- Marinate the stew meat overnight with lime juice, onion powder, garlic powder and a dash of cayenne.
- Brown hamburger with onion, garlic, bell pepper, celery and 1/2 tbsp of cumin.
- Brown sausage and drain fat.
- Cut bacon into bite size pieces and cooks until slightly brown.
- Drain fat.
- Remove stew meat from marinade and brown.
- Combine meat with all remaining ingredients is a large pot.
- Bring to a boil.
- Reduce heat and simmer uncovered for 3-4 hours or until the chili is of desired thickness.
- *Note: I cook it uncovered because I like my chili nice and thick.
